Delicous Gluten Free Cupcakes

     So a couple days ago, I was going to a birthday party that didn't have gluten free cake.  So I improvised and brought my own homemade gluten free cupcakes.  Here is my recipe.

3 cups Gluten Free All Purpose Flour
2 cups sugar
2 tsp baking soda
2 tsp xantham gum (if it's not in your flour blend)
1 tsp salt
3 1/2 cups milk
1/2 cup plus 2 tbs vegetable oil
2 tbs cider vinegar
1 tsp vanilla
3 eggs plus 1 egg white


    1. First preheat your oven to 350 degrees Fahrenheit. Then place cupcake liners into any size cupcake pan.

     2. Whisk together flour blend, sugar, baking soda, xantham gum and salt in a large bowl.  Then combine the milk, oil, vinegar and vanilla in a small bowl. 

     3. Pour wet ingredients into the dry ones and mix with an electric beater until smooth, scraping the sides and bottom of the bowl.  Immediately pour the mixture into the cupcake pan and bake for 15 - 20 minutes, or until you can stick a toothpick in the cupcakes and have them come out dry.

     4. Once you take the pan out, take the cupcakes out of the pan and let cool on a cooling rack for 3 - 5 minutes.  Cool completely before frosting.

Simple Chocolate Mousse

     So a few days ago, I did an iron chef challenge with my sister.  I ended up making a chocolate mousse.  My family has loved it since!  So I thought I would share the super simple recipe with you.

To your mixing bowl add 1 tbs of cocoa powder, 1/2 tbs of vanilla, and 2 cups heavy whipping cream.

Add in a cup of powdered sugar.  Then whip until semi-dense and fluffy.
This is the finished product in a cup with a strawberry on top.


See guys, super simple, and super yummy.  Oh, and you have to store it in a large bowl, because it makes a lot of mousse.  Enjoy!

Gluten Free Jalapeno and Cheddar Hush-Puppies

     So this recipe is really easy to make, and really good.  They are called jalapeno cheddar hush-puppies.  Here's a picture.
     To make these, just add some diced jalapeno, and shredded cheddar cheese to the hush puppy mix from my last post.  And then cook in hot oil, serve, and enjoy!

Cooking level: Simple- GF Fried Catfish and Hush Puppies

So I made this catfish for dinner with some hush-puppies.  They are both from the Gluten Free Bible.

 Here's the recipe.  I used avocado oil instead of vegetable oil and black pepper instead of red pepper.  I used the Namaste Gluten Free All Purpose Flour and it worked really well.

This is me making the dough for the hush puppies (step 3).

First I fried the catfish and kept it in the oven to keep it warm while I used the same pan to fry the hush puppies.  I saved some of the dough so I can add jalpenos and cheddar to make my dad some Mexican hush puppies!

Yummy Delicous Reuben

     So I have made myself, and ate THREE gluten free reubens.  I mean, they're so good.  For those of you who don't know what a reuben is, it's corned beef, sauerkraut, any type of cheese, and 1000 island dressing.  Then you butter one side of the sandwich, then flip it onto a griddle, grill, or a pan, and butter the other side.  Then you have to keep checking the sandwich until one side is golden brown, then flip, and repeat.  That is how you make a reuben.
     And here is a picture.  This is a picture that my mom took.
     A reuben is from Poland, which is probably why I love them so much.  Just for the record, I'm part polish, and so is my dad.  We both LOVE polish food, especially reubens.  Yesterday, I made my dad and I a reuben, and he loved it.  I was so happy, but I'm not going to get off topic.   You can typically find these deli sandwiches in delis, polish restaurants, and pubs.  Yes I said pubs, because it's a classic sandwich that ALOT of people love.
     And If you are looking for a good reuben in Detroit, there's this GREAT polish place called Pelonia.  It's my family's favorite polish place.  I used to always get this GREAT dish with peanut butter and jelly.  They also have pretty good duck soup.  But this is the end of the post, and I'm looking forward to my next one.
