Delicous Gluten Free Cupcakes

     So a couple days ago, I was going to a birthday party that didn't have gluten free cake.  So I improvised and brought my own homemade gluten free cupcakes.  Here is my recipe.

3 cups Gluten Free All Purpose Flour
2 cups sugar
2 tsp baking soda
2 tsp xantham gum (if it's not in your flour blend)
1 tsp salt
3 1/2 cups milk
1/2 cup plus 2 tbs vegetable oil
2 tbs cider vinegar
1 tsp vanilla
3 eggs plus 1 egg white


    1. First preheat your oven to 350 degrees Fahrenheit. Then place cupcake liners into any size cupcake pan.

     2. Whisk together flour blend, sugar, baking soda, xantham gum and salt in a large bowl.  Then combine the milk, oil, vinegar and vanilla in a small bowl. 

     3. Pour wet ingredients into the dry ones and mix with an electric beater until smooth, scraping the sides and bottom of the bowl.  Immediately pour the mixture into the cupcake pan and bake for 15 - 20 minutes, or until you can stick a toothpick in the cupcakes and have them come out dry.

     4. Once you take the pan out, take the cupcakes out of the pan and let cool on a cooling rack for 3 - 5 minutes.  Cool completely before frosting.
